Ingredientes (bolinhas de carne):
- 500gr de carne de vaca picada (para ser exactamente igual ao original, deverá ser utilizada carne de touro mesmo!)
- 1 c.chá de sal
- pimenta qb
- 1 pitada de gengibre
- 1 pitada de noz moscada
- 2 c. sopa de fécula de batata
- 2 a 3 dl de leite magro
- 1 c. sopa de margarina
(molho castanho)
- 2 c. sopa de margarina
- 4 c. sopa de farinha de trigo
- 6 a 8 dl de água
- 2 caldos de carne
- pimenta qb
Preparação:

Preparação:
1. Começar pelo molho
Derreter a margarina num tacho, até alourar. Seguidamente acrescentar a farinha e mexer bem até ficar acastanhado. Retirar o tacho do lume e acrescentar cerca de metade da água, mexendo bem de forma a não formar grumos. Deitar o resto da água e os caldos de carne. Levar de novo ao lume até ferver, colocar as especiarias a gosto.
2. Carne
Misturar bem a carne com o sal, as especiarias e a fécula de batata. Juntar o leite aos poucos, mexendo bem de forma a ficar uma mistura homogénea.
Com a ajuda de uma colher molhada em água fria, moldar a carne em pequenas bolinhas (cerca de 5-7cm de diâmetro), e levá-las a fritar numa frigideira de forma a ficarem bem cozinhadas.
Colocar as bolinhas de carne no tacho com o molho, durante 10 a 15 minutos, para que tomem o gosto do molho.
Servir com batatas cozidas e outros vegetais à escolha.
